Flat Oysters are grown around the world, and are Native to Tasmania. At SeaPerfect we have travelled the world to identify the best technology and processes to produce the Perfect oyster.
They provided sustenance to Tasmania's Aboriginal people, and then later upon settlement by Europeans they were both an important food resource, and building material. Their shells were burnt to produce lime for early settlers, providing the key ingredient to cement. The old Lime Kiln adjacent to our hatchery and nursery is evidence of this history.
Unfortunately, Flat Oysters were heavily fished here and around the world leaving them vulnerable to failures in recruitment and disease. Aquaculture of this delicious delicacy is the only sustainable way that diners will have of enjoying them into the future.
Flat Oysters have an unusual characteristic in their lifecycle, which no doubt aided the Romans when they started producing them centuries ago. The eggs and larvae are retained on the gills of the female within her shell until they are ready to be released for dispersion into the sea just prior to settlement where they cement themselves to a substrate, where they grow into an adult.
Our collaborations with producers of Flat Oysters around the world have allowed us to identify important processes in the management of broodstock, larval rearing, and advanced nursery handling systems that are critical to supplying the Perfect Flat Oyster to the grower on its journey to the consumer.
